  • 4 cups mixed frozen berries;
  • 1 cup coconut milk (or any other lactose free milk);
  • 0,5 table spoon powdered stevia.

Directions:

  1. Combine berries, milk and stevia and process until smooth. Add sweetener if you want to.
  2. Serve the ice cream right away or put it in the freeze to change its texture.

2. A Microwave Berry Cobbler

Ingredients:

  • 3/4 cup strawberries (or any other berries);
  • 1/4 cup powdered sugar;
  • 1/3 cup flour;
  • 1 table spoon sugar;
  • 1/2 table spoon baking powder;
  • 1 table spoon coconut butter;
  • 2 table spoons coconut milk.

Directions:

  1. Chop berries and add powdered sugar. Stir to combine and make it smooth.
  2. In another bowl combine and mix sugar, baking powder and flour. Add coconut butter and rub it until combined. Add coconut milk and stir it.
  3. Add the dough to the top of berries and add some sugar if you want to.
  4. Microwave for 1 ½ to 2 minutes.

  • 1 cup nuts;
  • 1/4 cup sugar;
  • 1 tablespoon coconut butter;
  • 1/4 table spoon cinnamon (optional).

Directions:

  1. Heat a pan over medium and add nuts, sugar, coconut butter and cinnamon. Stir constantly with a rubber for approximately 5 minutes (or even less if your nuts are chopped) until the nuts are evenly coated with sugar-butter caramel.
  2. Transfer your nuts to a parchment paper immediately and separate them using 2 forks if you do not want them to harden together. The nuts and caramel will harden in 5-7 minutes.

  • 1 table spoon coconut oil;
  • 2 table spoons coconut milk;
  • 1 table spoon apple sauce;

  • 2 table spoons sugar.

Directions:

  1. Pour batter into a mug. To be on the safe side, set it on a paper towel.
  2. Cook for 45 seconds at full power. The cooking time will vary, depending on the power of yur microwave.

  • 2 table spoons almond meal;
  • 2 table spoons cocoa powder;

Directions:

  1. Combine coconut milk with other ingredients and stir well. The batter will be thick and pretty much like regular brownie batter.
  2. Pour batter into a small mug and microwave it for 45 seconds at a maximum power.

Ingredients:

  • 1 tea spoon brown sugar;
  • 1 slice pineapple;
  • 1 table spoon olive oil;
  • 2 tablespoons coconut milk;
  • 1 tablespoon pineapple juice;
  • 1/2 tea spoon pure vanilla extract;
  • 1/4 tea spoon baking powder;
  • a pinch of baking soda;
  • 2 table spoons sugar;
  • 4.5 tablespoons flour.

Directions:

  1. Put brown sugar at the bottom of an 8 ounce microwave safe mug, place pineapple slice on top of sugar.
  2. Mix all the remaining ingredients in a separate bowl.
  3. Pour the batter over a pineapple in a mug. Set the mug on a paper towel in a microwave.

Directions:

  1. Combine oil, vanilla, milk and banana in a mug.
  2. Add flour, sugar, cinnamon, baking soda, baking powder and ginger. Stir well.
  3. Divide batter into two parts and pour them into 2 ramekins. Place ramekins on a paper towel.

  • 1 can coconut milk;
  • 1.5 tea spoons vanilla extract.

Directions:

  1. In a microwave safe dish, blend sugar, salt, cocoa, cornstarch, and espresso powder.
  2. Whisk in about ½ cu coconut milk, stirring it all the time. Break up clumps and add the remaining coconut milk.
  3. Microwave it for 1/5 minutes at high power and heat for 2 minutes more, stirring it every half a minute.
  4. Add vanilla extract and pour into dessert cups. Cool it down in a fridge or serve warm
